1) Cauliflower Oats Utthappam:

My friend discovered this recipe and shared with me. I tried and it has come out delicious and we loved it. Here I post the same.

 
Ingredients:
 
Oats: 1 cup
Rice flour: 1 cup
Wheat flour: 1 cup
Besan flour: 3-4 tbsp( optional)
Cauliflower: 1 cup
peas: 1/2 cup
Onion: 1 (optional)
Corriander leaves: 1 cup
Jeera : 1 tsp
Turmeric:1/4th tsp
Green chillies: 3-4
Salt to taste.
 
Preparation:
 
1) Chop the green chillies and corriander leaves finely.
2) Boil water in a pan, and add cauliflower florets , peas and onions.
3)Soak oats for around 30 minutes.
4) After cooling, grind the cauliflower and peas , onions.
 
Method:
 
1) Add all the flours in the bowl and mix with the soaked oats . Use the veg stock that we have it from the cauliflower and peas.
2) Add the dry spices and add the vegetable paste in to it. Add the corriander leaves and chillies in to it.
3) Mix it thoroughly. Add water to the uthappam consistency or dosa battter consistency.
4) Heat the tava and pour the batter on the tava, spread it thick to make it as utthappam or spread it thin to make a dosa, using oil or ghee, fry on both sides till golden brown.
5)Serve hot with chutney, sambar or any podi( powder).
